These Red Wine Biscuits are the perfect delivery vehicle for Pistachio and Chive Goat Cheese Spread but they’d be a welcome addition to any cheese tray. You could even pair them with a rich stew like beef bourguignon and crisp green salad.

Red Wine Biscuits

Ingredients

Scale
  • 2½ cups unbleached all purpose flour
  • ⅓ cup sugar
  • 1 teaspoon salt
  • 1½ teaspoons freshly ground black pepper
  • 1½ teaspoons baking powder
  • ½ cup red wine
  • ½ cup soft butter

Instructions

  1. Preheat the oven to 350℉ and place parchment paper on 2 baking sheets.
  2. Measure the flour, sugar, salt, pepper and baking powder in a bowl and stir to mix well.
  3. Make a well in the center of the flour mixture and stir in the wine and butter. Tip: Once the dough starts to come together, use your hands to make sure the butter has penetrated the dough and bring it together in a ball.
  4. Transfer the dough to a well-floured work surface and pat it into a rectangle. 
  5. Use a rolling pin to roll the dough, keeping the rectangle shape, to a half-inch thickness.
  6. Cut the dough with a cookie cutter. Tip: You should get 18 – 24 biscuits depending on the size of your cookie cutter. If you don’t have a cookie cutter, just use a sharp knife to cut the dough equally.
  7. Place the biscuits on parchment paper on baking trays and bake them for about 20 minutes. Tip: They’ll be a little brown on the bottom and a little pink throughout because of the red wine.
  8. Enjoy as an appetizer with Pistachio and Chive Goat Cheese Spread or your favourite cheeses.
