
This Garden Fresh Zoodle Salad is adapted from Two Peas and Their Pod. I love how much of the garden you’re eating when you eat this salad. I especially love what a tasty way it is to use up zucchini.
Let’s face it. It’s August. There’s lots of zucchini around. Even if you or none of your friends have a garden, the farmers’ markets are overflowing with them. So, here’s a fresh way to enjoy them and lots of the other fresh bounty of the season.
Do use the freshest peaches and cream corn you can find for the corn bit. You’ll be delighted with the sweetness and the lack of needing to cook it. For me, the additional colour of the tomatoes, the crunch of sugar snap peas, the bite from two kinds of onion plus the tang of herbed Chèvre takes an already fabulous salad to yet another level.

Fun Zucchini Noodles or Zoodles are brightened with the colour of tomatoes, the crunch of sugar snap peas, the bite from two kinds of onion plus the tang of herbed Chèvre. All together, this combination brings the garden fresh to your plate.

Ingredients
3 Tablespoons white balsamic glaze
1 clove garlic, minced
1/3 cup olive oil
2 zucchinis, cut into zoodle noodles with a spiralizer
2 cups heirloom or multi-coloured grape tomatoes, halved
1 cup sugar snap peas, top, tailed and halved
2 raw cobs corn, kernels sliced off and reserved
½ cup diced red onion
½ cup diced green onions
2 ounces package herbed Chèvre (goat cheese), crumbled
½ cup packed basil leaves (save a few leaves to use as garnish)
2 ripe avocados, sliced
Instructions
- Place the balsamic glaze and garlic in a small bowl and whisk in the olive oil to make the dressing. Set aside.
- Place the zoodles (zucchini noodles), tomatoes, peas, corn, onions and Chèvre in a large bowl. Just before serving, add the dressing and basil leaves, tossing to coat.
- Enjoy garnished with the avocado slices and reserved basil leaves.
