These S’more Krispie Treats came to be because July hit and I could not get the idea of campfires and s’mores out of my head. Not able to get out camping, I decided to bring the fun of s’mores alive with a riff on good ol’ Rice Krispie Treats. Those treats already have the marshmallows. I added crushed chocolate covered Digestive Cookies in place of graham crackers and a piece of chocolate bar.

They were a big hit with my hiking group and will definitely hold me over until I can enjoy the real deal over a campfire this summer. Hope you’ll give them a try. Let me know if you do.

This recipe takes a campfire favourite and uses it to give Rice Krispie Treats an update.

Ingredients

6 Tablespoons unsalted butter plus a little more to butter the pan

400 gram package mini marshmallows

½ teaspoon vanilla extract

4 cups Rice Krispies

2 cups crumbled Chocolate Covered Digestive Cookies

Instructions

Use a little butter a 9×13-inch glass baking dish. Tip: if you like your Krispie Treats fat, use a 7×11-inch pan.

Melt the 6 Tablespoons of butter in a large nonstick skillet on low-medium heat and add the marshmallows. Stir until the marshmallows are melted – about 5 to 10 minutes.

Turn off the heat and add the vanilla extract then stir in the Rice Krispies and crumbled cookies until they are well coated.

Press the mixture into the buttered pan and chill in the refrigerator for at least 10 minutes before serving or cutting.

    In your comments re the recipe you mentioned you added a piece of chocolate bar yet your actual recipe doesn’t mention it?

      Hi Carol, It says to use chocolate-covered Digestive cookies IN PLACE OF or instead of graham cracker and a piece of chocolate bar. Should I change in place of to instead of?         Ok, Now I see where I might have misread it, thinking you also added a piece of choc bar as well as the choc covered cookies. My question to myself was how much choc bar did she put in? All in how you read it! Ha! Ha! I am making them tonight! Thanks for responding!
