Ingredients
For the salad:
1 large heirloom tomato, cut in half and sliced
1 ripe avocado, halved, peeled and sliced
2 peaches (or nectarines), halved and sliced
10 basil leaves, cut in thin strips (chiffonade)
For the dressing:
Pinch salt
1 Tablespoon champagne or rice wine vinegar
1 Tablespoon honey
1 Tablespoon lemon juice
4 – 6 Tablespoons avocado or olive oil
Freshly ground black pepper – as desired
Instructions
For the salad:
- Arrange the slices of tomato, avocado and peaches in alternating pieces on a plate.
- Sprinkle with the basil.
For the dressing:
- Use a whisk to dissolve the salt in the vinegar.
- Add the honey and lemon juice then slowly whisk in the avocado or olive oil.
- Drizzle the plated tomatoes, avocado and fruit slices with the dressing and serve with a dash of pepper as desired.
