Why is it Berbon Glazed Ham and not Bourbon Glazed Ham? Here’s the story.
My friends Nicole Liboiron-Coles and her husband Warren Coles are famous for this delicious ham recipe, lovingly basted over a few hours with bourbon. When I discovered that Calgary’s Bridgeland Distillery uses Alberta’s famous Taber Corn to make their award-winning Berbon, I knew this tasty local ingredient would make this ham recipe even more scrumptious. I even started a hashtag, #berbonNOTbourbon. And, I love this recipe so much, I included it in my cookbook, Eat Alberta First.

Juicy glazed ham with a sweet berbon sauce.

Ingredients
1 – 5 to 6 pound Boneless Gammon or Bone-In Ham
½ cup Bridgeland Distillery Berbon (or your favourite Bourbon)
½ cup Alberta (or your favourite) honey
¼ cup molasses
¼ cup orange marmalade
1 cup orange juice, divided (¼ then ¾ cup)
2 Tablespoons Alberta (or your favourite) mustard
Instructions
- Preheat oven to 325℉.
- Stir the Berbon, honey, molasses, marmalade, ¼ cup of the orange juice and mustard in a small saucepan over medium heat.
- Rinse the ham under cold, running water, pat it dry with a paper towel and place on a rack in a shallow roasting pan. Score the surface diagonally in both directions with ½ -inch deep cuts.
- Use a pastry brush to baste the surface of the ham with the Berbon glaze. Add the remaining ¾ cup of orange juice to the pan, place in the middle rack of the oven and bake for 2 to 2½ hours.
- Baste the ham every 30 minutes throughout and cook until a meat thermometer reads 140℉.
- Enjoy with Sweet Scalloped Potatoes, Never the Same Way Twice Coleslaw and Hot Pepper Cornbread or your favourite sides.
