Berbon Glazed Ham

Juicy glazed ham with a sweet berbon sauce.

Ingredients

1 – 5 to 6 pound Boneless Gammon or Bone-In Ham

½ cup Bridgeland Distillery Berbon (or your favourite Bourbon)

½ cup Alberta (or your favourite) honey

¼ cup molasses

¼ cup orange marmalade

1 cup orange juice, divided (¼ then ¾ cup)

2 Tablespoons Alberta (or your favourite) mustard

Instructions

  1. Preheat oven to 325℉.
  2. Stir the Berbon, honey, molasses, marmalade, ¼ cup of the orange juice and mustard in a small saucepan over medium heat.
  3. Rinse the ham under cold, running water, pat it dry with a paper towel and place on a rack in a shallow roasting pan. Score the surface diagonally in both directions with ½ -inch deep cuts.
  4. Use a pastry brush to baste the surface of the ham with the Berbon glaze. Add the remaining ¾ cup of orange juice to the pan, place in the middle rack of the oven and bake for 2 to 2½  hours.
  5. Baste the ham every 30 minutes throughout and cook until a meat thermometer reads 140℉.
  6. Enjoy with Sweet Scalloped Potatoes, Never the Same Way Twice Coleslaw and Hot Pepper Cornbread or your favourite sides.
