Wild Blueberry Cobbler

You don’t need to have a lot of ingredients on hand to pull this quintessential summer cobbler together and it’s always a crowd-pleaser.  Here in Alberta, feel free to substitute saskatoon berries for the wild blueberries.

Ingredients

3 cups wild blueberries

1 cup sugar

1½ cups Bisquick

2 Tablespoons melted unsalted butter

2 Tablespoons sugar

2/3 cup milk

2 Tablespoons cornstarch

½ cup sugar

1 cup boiling water

Instructions

  1. Preheat the oven to 400°F.
  2. Mix the blueberries and 1 cup sugar and place in an 8 x 8-inch buttered pan.
  3. Mix the Bisquick, melted butter, 2 Tablespoons sugar and milk in a bowl until smooth and spread over the berries in the pan.
  4. Mix the cornstarch and ½ cup sugar together and sprinkle over the batter.
  5. Pour the boiling water over the batter.
  6. Place the cobbler in the oven and bake for 50 minutes or until golden brown.
  7. Enjoy warm with ice cream or whip cream.
