Ingredients

Cooking spray

1¾ cups (divided 1 then ¾ cup) organic Alberta rolled oats (I used Highwood Crossing)

¼ cup organic cane sugar

¼ cup dried apricots

¼ cup raisins

¼ cup ground organic Alberta Flax seed (I used Highwood Crossing)

¼ cup unsalted sunflower seeds

¼ cup unsweetened shredded coconut

¼ cup cooked red quinoa

2 Tablespoons chia seeds

¼ teaspoon baking soda

¼ cup Alberta honey

¼ cup unsalted butter, melted

¼ cup organic Alberta canola oil (I used Highwood Crossing)

½ teaspoon vanilla extract

72 frozen Saskatoon Berries

Instructions

  1. Preheat the oven to 350℉ and spray a 24 cup mini muffin pan with cooking spray.
  2. Pour 1 cup of the oats into the bowl of a food processor and pulse until it becomes oat flour.
  3. Add the remaining oats, sugar, apricots, raisins, flax and sunflower seeds, coconut, quinoa, chia seeds and baking soda and pulse until the apricots are small bits.
  4. Add the honey, melted butter, canola and vanilla and pulse until just combined.
  5. Divide the batter between the muffin cups, poke 3 Saskatoon berries on the top of each and bake for 10 to 12 minutes or until golden brown.
  6. Cool completely in the pan on a wire rack. Store in an airtight container.
