Hodge Podge

Hodge Podge - close up

A Hodge Podge is an untidy mixture of things and in this case it is all your favourite veg from the garden cooked with cream and butter. Yum!

Ingredients

2 lbs new baby potatoes 

1 lb baby carrots

6 new baby onions

1 lb freshly shelled peas

½ lb yellow snap beans

½ lb green beans 

2 cups whipping cream

¼ cup unsalted butter

½ cup chopped fresh dill

Salt and Pepper to taste

Instructions

  1. Boil the potatoes in enough water to cover until tender but not falling apart. Drain and set aside.
  2. Boil the carrots and onions together until tender and add the peas and beans for 3 – 5 minutes before draining.
  3. Combine all the vegetables in a large pot and add the cream and butter. Simmer slowly until heated through.
  4. Ladle servings into large bowls and top with a garnish of the fresh dill and lots of salt and pepper.
  5. Enjoy a supper of just these fresh from the garden veggies or add poached salmon or white fish to the mix.
