Hot Turkey Sandwich Calzones are an update on a classic Canadian sandwich. At so many of the family run restaurants and diners around our country, a hot turkey sandwich is a staple on the menu. And, after each turkey-themed holiday, it was a staple on Mom’s menu too. She always made lots of gravy so we could indulge in the treat of hot gravy poured over a sandwich piled high with fresh turkey, bright red cranberries and a bit of stuffing squeezed in too.

With these calzones, the dinner roll base takes the place of sandwich bread. Instead of the gravy having to do the work of heating everything in its path from the exterior, all the ingredients are tucked inside the calzone with the gravy and it all comes off piping hot.

I hope you’ll give these a try if you’ve still got some turkey leftovers hanging around. They’re super easy and fun. And if you are all “turkeyed-out”, the best part is that you can tuck them in the freezer until you do crave turkey again. I managed to gobble (get it?) a few as I tested the recipe today but am very happy there’s more Hot Turkey Sandwich Calzones in my freezer. Turkey dinner would be my first choice for a last meal. Ingredients

24 frozen dinner rolls

Olive oil

Leftover gravy

Leftover turkey

Leftover stuffing

Leftover mashed potatoes

Leftover cranberry sauce

Few teaspoons melted butter

Instructions

  1. Thaw the dinner rolls in their bag in the refrigerator overnight.
  2. Preheat the oven to 400℉ and line 3 baking sheets with parchment paper.
  3. Arrange the leftover gravy, turkey, stuffing, mashed potatoes and cranberries next to your work surface and place a Tablespoon in each of them.
  4. Spread the work surface with olive oil and one by one roll the dinner rolls out to 6-inch circles.
  5. Spread the inner 4 inches with gravy then place 1 Tablespoon each of turkey, stuffing, potatoes and cranberry sauce.
  6. Fold the dough over the filling to form a half circle and pinch the ends together to seal the calzone.
  7. Use a knife to make a few slits on the top of each calzone and transfer them to the awaiting baking sheets. Now you can either cook them straight away or freeze them for when you are craving the taste of turkey dinner again – about a month after your big turkey dinner.
  8. Brush the calzones with melted butter and bake for 15 minutes if eating right away or 20 – 25 minutes if baking from frozen.
  9. Enjoy with more cranberry sauce and salad or coleslaw for a great lunch, snack or light supper.
