These Crispy Chocolate Chip Cookies are my husband’s favourites. They are his Mom’s recipe and when she sends him a bag of frozen ones, he likes to keep them frozen and eat them straight from the freezer. He really likes his cookies crispy.

I lean a little more towards my recipe for Best Ever Chewy Chocolate Chip Cookies. Is there really a bad chocolate chip cookie recipe though?

Crispy Chocolate Chip Cookies

  • Yield – 6 dozen cookies
  • Time – 30 – 45 minutes
  • Equipment needed – baking sheets, parchment paper, small cookie scoop or tablespoon

  • 1 cup butter, softened
  • ½ cup brown sugar
  • 1 cup granulated sugar (I used organic cane sugar)
  • 2 large eggs
  • 2 teaspoons vanilla
  • 2 ¼ cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups chocolate chips
  • 1 cup of walnuts (I mixed in some pecans too)

  1. Preheat the oven to 350F and line baking sheets with parchment.
  2. Beat the butter and sugars in a stand mixer on high until light and fluffy.
  3. Add the eggs one at a time, beating and scraping down the sides of the bowl between each.
  4. Add the vanilla and beat again.
  5. Add the flour, baking soda and salt and mix on low to combine.
  6. Add the chocolate chips and nuts and mix until well-combined.
  7. Use a small cookie scoop to gather and place dough balls evenly on the baking sheets – a dozen per sheet.
  8. Bake 12 minutes and remove from oven. Cool on the cookie sheet for a few minutes and then use a spatula to transfer to a rack.
  9. Enjoy with a cold glass of milk.

Note: you don’t have to cook all the dough at once. You can form the balls and freeze them on a cookie sheet to bake off later. This is especially good if you are trying to sell your home – you can always bake a few cookies before a showing!
